Development chef Kristian Wade at Northgate Foods in Olding Road has created a new Pekin duck dish, an Indian version of the the Chinese aromatic duck pancake.
Working with three other companies to create the Southern Asia inspired Aromatic Duck ChaPancake Kris has used a blend of spices which coat slow cooked Dalee duck meat. This is served with red onion, chopped herbs, a chapati style pancake and mild Tamarind or spicy sauce.
The dish is being rolled out to Indian restaurants throughout the UK and ultimately worldwide.
The BR Group in Holland supplies the Dalee duck while Ming foods from Swanley supplies the new chapati pancake and East End Foods the sauce accompaniment.
Kristian said: “The blend of herbs and spices used in this dish mixes up cooking themes from across all 28 regions of India.
“It is a melting pot of ideas and a combination of infusions to satisfy the six different tastes that make up our palette. It is one dish that will engage all the senses.
“And we are massively proud to say that like the UK’s most popular Indian dish, Chicken Tikka Masala it has originated in the UK.”
Northgate Foods supplies meat, poultry and fish to the food industry and was established in 1991. It is also the parent company of Golden Gate Foods which specialise in supplying oriental foods.
